The Sous Chef is responsible for:
  • Preparing and/or directing the preparation of food to be served to residents and staff
  • Efficient operation of the kitchen in the absence of the Director of Dining Services and Executive Chef
  • Accountability for the quality and consistency of the finished product as well as HACCP protocols and all applicable sanitation, health and personal hygiene standards and following established food production programs and procedures 
  • Appropriate use of facility supplies and equipment to minimize loss, waste and fraud
  • A working knowledge of food products, packaging, product rotation and basic cooking skills is required
Requirements:
  • High School Diploma and Culinary Arts training.  A Culinary Arts Degree or certification by ACF preferred.
  • Serv Safe Certification is required.
  • A minimum of 3 year related production and supervisory experience in a continuing care retirement community, hospital, hotel, restaurant or similar facility.
  • Must possess a customer service background and orientation.
  • HACCP training preferred.
