Job Summary
This cook can exhibit qualifications of cook 1 and 2 and is responsible for preparing, working with and delivering food according to the nutritional needs of the patients, providing food and customer service to patients and personnel while maintaining high standards of quality, sanitation and safety.
 
Essential Job Functions & Responsibilities
 
  • Understands modified diets and is a team player in working toward patient nutritional well-being.
 
 
  • Meets time deadlines for patient services, café service and caterings
  • Prepare a variety of meats, seafood, poultry, vegetables and other food items in broilers, ovens, grills, fryers and a variety of other kitchen equipment according to restaurants standardized recipes.
  • Assumes 100% responsibility for quality of products served.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures.
  • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.
  • Portions food products prior to cooking according to standard portion sizes and recipe specifications.
  • Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment.
  • Prepares item for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating.
  • Follows proper plate presentation and garnish set up for all dishes.
  • Handles, stores and rotates all products properly.
  • Assists in food prep assignments during off-peak periods as needed.
  •  
  • Closes the kitchen properly and follows the closing checklist for kitchen stations. Assists others in closing the kitchen.
  • Attends all scheduled employee meetings and brings suggestions for improvement.
  • Preforms duties of cook 1 in addition to the following:
  • Adheres to all department and facility rules, guidelines, and policy & procedures
  • Participates and attends departmental meetings, huddles, and staff development programs
  • Participates in incident reporting per policy and in a timely manner
  • Follows facility and departmental infection control policies and procedures
  • Follows the facility’s protocols for Hazardous Materials and Waste Program
Essential Job Functions & Responsibilities
  • Has knowledge of and Adheres to Emergency Preparedness Program.  Participates in disaster drills, as appropriate
  • Adheres to Life Safety Program and participates in fire drills as appropriate
  • Responds to utility failures following department guidelines
  • Adheres to facility confidentiality and patient’s rights policy as outlined in the facility’s HIPAA policies and procedures
  • Maintains a clean, safe, and sanitary work environment in food and nutrition department, nursing units, patient pantries, and transport vehicle (when applicable)
  • Completes temperature logs as directed
  • Complies with federal, state and local health and sanitation regulations and department sanitation procedures
  • Follows HACCP guidelines when assembling and distributing food supplies to ensure quality and safety of food supply
  • Identifies and utilizes cleaning chemicals following directions recommended by manufacturers and per SDS sheets
  • Utilizes equipment in performing job functions according to directions and department’s safety procedures
  • PERFORMS OTHER TASKS AS ASSIGNED WITH A POSITIVE ATTITUDE
 
Qualifications
 
 
  • A minimum of 2 year of experience in kitchen preparation and cooking.
  • Must complete Cook 3 Competency at 85% success rate
  • Must complete series 1 and 2 of diet competency at 85% success rate
  • At least 6 months experience in a similar capacity.
  • Must be able to communicate clearly and effectively
  • Be able to reach, bend, stoop and frequently lift up to 40 pounds.
  • Be able to work in a standing position for long periods of time.
  • Must have exceptional hygiene and grooming habits.
 
  • Ability to help contribute to a positive, cohesive, teamwork driven environment. Must have ability to multi-task, problem solve, and maintain composure and positive attitude in a high stress and fast paced environment.
 
Education & Experience:
High School educations with ability to learn, retain, and perform new information.
Language Skill:
Ability to clearly read, write, speak, and comprehend verbal English.  Ability to read and interpret documents such as safety rules, instructions, and procedure manuals written in English. 
Mathematical Skills:
Basic skills required – ability to add, subtract, multiple, divide using whole numbers, common fractions, and decimals.  Ability to compute ratio & percent
 
 
Reasoning Ability:
Ability to apply common sense and understanding to carry out directions given in written or oral form.  Ability to problem solve situations in face paced environment. Ability to work with minimal supervision and direction.
